New Mexican has ethnic ties to Puebloan peoples as well as the Hispanos of New Mexico. Those ethnic roots are important to those people, they often take their culinary heritage with them outside of New Mexico or Texas, since it a part of their ethnic identity as Neomexicanos and Tejanos.)
